Yield: Two Large "Loaves"

  • 6 Cups flour
  • 3 tbsp sugar
  • 1 tbsp salt
  • 4.5 tsp of active dry yeast
  • 2 tbsp of shortening
  • 2 1/4 Cups of very warm water

 Inside "toppings"*** ( can change upon desires)

  • 3 Cups Peppers and Onions, chopped or sliced
  • 3 cups Italian Sausage, chopped
  • 3 Cups cheese
  • 1/2 Lb of sandwich pepperoni


Mix 3 Cups Flour, salt, sugar, yeast, and shortening and beat til well mixed for one minute. Add remaining flour by 1 Cup intervals and mix until elastic. Turn out on a lightly floured surface and knead for 5 minutes or until doughball is smooth. Put into a greased bowl and let rise for 40 to 60 minutes or until double in size. Preheat oven to 400 degrees Punch down and divide dough in half. Flatten into a large square. Add two tbsp of veg/canola oil and spread over surface of inside of dough. Add desired toppings to inside. Roll toward you and seal ends by pinching edges together. Transfer carefully, seam on bottom to large cookie sheet. Let rise 10 to 15 minutes Brush with a mixture of 2 tsp garlic powder and 3 tbsp oil. Place in oven for 20 minutes take out and brush again with garlic powder/oil mix. Place back in oven for 5 minutes. Take out and let stand for 5 minutes. Serve with tomato sauce or marinara.
