Ham Caserole by Linda Jackson
I thought I woould post this recipe as I know Ham is going to be super cheap over the next month and people are going to need some new ideas for what to do with it.
I made this dish a few days ago after we had ham on sunday. I bought a precooked, sliced ham at aldi for a like $6 and it worked just as well, just make sure it doesn't get too over done. I also left out the corn (I'm not a fan) and used a sweet onion Recipe is pretty simple though.
Ham Caserole

Ingrediants:
2 cups of cubed precooked ham
2 cups of cubed potatos
1 can of whole corn (15 oz)
1/4 cup of parsley
1 tbsp butter
1 tbsp of chopped onion
1/3 cup of flour
1 3/4 cup of milk
1/8 tsp of pepper
4 oz shredded cheese
Directions:
Boil potatoes in a regular pot with a pinch of salt in the water until cooked but firm. This should take about 15 minutes. drain and cool
Combine Ham, Potatoes, corn and Parsley in the pot and set aside.
in a large sauce pan brown onion with butterstir in Flour and blend well. then slowly add in milk and bring to a boil. When finished pour over ham mixture.
Transfer all contents to a baking dish and cover. bake at 350 for 25 minutes. Remove and cover with cheese and bake for an additional 5 to 10 minutes.
